How It's Made: Chocolate Ganache Cake

This Mother's Day go all out and make your mum a cardamom-infused chocolate ganache cake. Here's the chef at The Kingsbury showing you how.

Serving: 1 cake / 10-15 people



  • Eggs - 6
  • Sugar - 165g
  • Flour - 150g
  • Cocoa powder - 20g
  • Corn oil - 15g


  • Cream - 300ml
  • Cardamom - 10g (Optional - if you prefer the flavour)
  • Dark chocolate - 500g

Final Prep:

  • Sugar syrup
  • Whipped chocolate cream
  • Macaroons and chocolate plaque for the garnish



  1. Add eggs to a bowl
  2. Add some sugar
  3. Blend till creamy white - add rest of the sugar while it blends
  4. Mix the flour and cocoa powder in a separate bowl
  5. Now stir the cocoa mix into the egg mix
  6. Add corn oil and stir till smooth
  7. Pour this batter into a 9" cake ring
  8. Pop it into the oven to bake at 180°C for 15 minutes


  1. Cook the cream and cardamom together in a pan for 5 min
  2. Add dark chocolate
  3. Stir till it melts into a smooth, dark cream
  4. Keep in a cool place

Final Prep:

  1. Slice the base sponge cake into three even layers
  2. Place the first layer into the cake ring
  3. Next - a thin layer of sugar syrup
  4. Add a layer of ganache
  5. Add a layer of whipped chocolate cream
  6. Add the second layer of sponge cake
  7. Repeat the syrup-ganache-cream
  8. Add the last layer and repeat syrup-ganache-cream again
  9. Refrigerate for 1/2 hour
  10. Pour and pat the ganache over the base till it covers it completely
  11. Add garnish of chocolate plaque and macaroons if you like
