How To Make Kanji

How to make a flavoursome, hot bowl of kanji (porridge) for your Ramadan evenings. Or anytime, really.

Serves 2-3


  • 500-750 ml water
  • 500 ml coconut milk


  • 1 tsp chilli powder
  • 1/2 tsp fenugreek
  • pinch of turmeric
  • 3-5 small green chillis
  • 4 cloves of garlic (chopped)
  • Handful of coriander


  • 1 tsp butter
  • 1 sliced onion
  • 1 diced chicken breast
  • 1 Knorr chicken stock cube
  • 1/2 cup rice

Salt to taste


  1. Melt the butter in a pan over a medium heat. Add the onions and cook. 
  2. Add garlic paste and saute the onions until golden
  3. Add the chicken and all the spices, fresh garlic and coriander. Cook for 3-4 mins.
  4. Add the rice and water.
  5. When the rice is almost cooked, add coconut milk and a Knorr stock cube.
  6. Bring to a boil and serve when the rice is cooked and the consistency is as you like (add more water/coconut milk for a runnier kanji).
